Tilting, steam jacketed kettles are wonderful to have on hand in commercial kitchens. Just in case you aren’t familiar with them, the kettles are perfect for making, holding and reheating a wide range of restaurant fare. Among those dishes are hearty stews, creamy soups, thick gravies, braised meats and a wide variety of classic sauces. There’s usually just one problem. When they are brand new, most cost entrepreneurs anywhere from $4,000 to $20,000 or more! Case in point, in December 2014 we auctioned off several tilting, steam jacketed kettles manufactured by Cleveland. The ones that we let go in December for a steal were KET-12Ts and came complete with sturdy, stainless steel stands. They were capable of holding 12 gallons or 45 liters of food at one time and ran on anywhere from 9.8 to 12.3 kilowatts. However, the company makes floor type, steam jacketed kettles that are much bigger than that. The largest ones that we’ve seen to date were the KEL-100Ts and the KEL-100s. Both can accommodate 100 gallons or 375 liters and run on 14.7 to 29.4 kilowatts.
